We recently catered a business event for Eddie, who had asked us to serve our amazing pigs in buns, which we created from a freshly-cooked pig on the day. After arriving early in the morning and setting up our equipment, our Hog Roast Wickham Market chef and catering team members got to work preparing the meat to be roasted, by scoring it all over, adding plenty of water and then smothering it in salt, which produces the crispy crackling that everyone loves.
